2010 Tinja Preservative Free Merlot

Vibrant young red very dark in colour, richly textured with aromas of blood plums, star anise and a spicy full palate with fne tannins which are another form of protection.
Only for immediate enjoyment it will not mature past 18 months so drink before mid 2011, but that doesn't mean it will go "off".
Bottled immediately after fermentation without any oak influence, this seductive innovative organic wine is designed for immediate enjoyment - especially with risottos, stews and tagines or the mid-week feet-up spag bol.

Extreme dry throughout the growing season with 1/3 normal crop. Grapes were ripe early February 1 month early and escaped the summer rain thankfully.
Vinification
Cold fermented at 15 Centigrade with a neutral yeast, pressed early then stored cold at 10 Centigrade until early bottling in May. Tis process retains some natural CO 2 and prevents oxidation, the only way to manage the quality in this wine.

Preservative-free wines used to be vinous fringedwellers, lurking unloved in dusty corners of Australia’s bottle shops and organic stores. Now you can find excellent preservative-free wines flying off lists in trend inner city restaurants and bars. It’s all part of a move towards more ‘natural’ wine - wine that hasn’t been buggered around too much with in the vineyard or winery. I’ve reviewed some of Australia’s pacesetters in this field before: Torbreck in the Barossa, who first produced a wonderfully spicy ‘Natural Wine Project’ preservative-free grenache in 2009 (look out for the even better, brighter-tasting 2010); Lowe Wines in Mudgee, whose briary tasting 2010 preservative-free merlot is out now under the Tinja label and whose 2009 preservative-free merlot is tasting better and better with bottle age;….
