This pinot noir has a spicy palate brought on by the 'sandwich technique' yet the wine is soft and cherry-like on the palate, hallmarks of the cool climate fruit.
Vintage Report
The 2008 vintage was a good one for Nullo Mountain with adequite rainfall throughout the season yet dry leading up to harvest. The pinot noir vines were fruit thinned to ensure berries of the best intensity.
Winemaking
Hand picked fruit was fermented using the "sandwich technique" (developed by David Lowe in the 1980's). This means that the first of three layers is crushed grapes, the second layer is whole bunches, then the final layer is crushed grapes. This gives the wine a spicy perfume, minimises the woody stem flavours and delivers early appeal
